A year ago, at 8:56pm

5:17am. That’s when it was. One of the best things that’s ever happened in my life.

But let’s rewind a little first.

Exactly one year ago today, at 8:56pm, we called our parents, and I began to walk the halls of the hospital hoping to induce stronger contractions to bring our baby boy into this world. 

Less than 8 hours from when we arrived, our little man greeted us in the early hours of the morning. Perfect as can be. Ten perfect toes. Ten perfect fingers. And the sweetest face I’d ever seen.

I’ve never know a moment more filled with love and so much emotion.

Motherhood is such an incredible process. You carry a little human in your belly for 9 months, pray that everything goes smoothly through delivery, and then in an instant it’s all over. But really…..it’s just the beginning of so much greatness.☺️

Being a mama is BY FAR the most joyous thing I’ve ever done in my life. Just knowing that I was able to bring life to something so tiny and perfect is amazing and overwhelming all at the same time.

• One year ago…..at 8:56 pm, I had no idea the amount of love I was about to have for a single tiny human. I had no idea the amount of love that was about to grow between my husband and I.

• One year ago…..at 8:56 pm I was about to endure the most exhausting experience of my life, all to meet our precious boy.

• One year ago…..at 8:56 pm, I was about to become a mom.

• And now…..a year later…..at 8:56 pm, I never knew how emotional I’d be to think back on that night and on this last year of Huddy’s sweet life. So much joy, learning, and love.

My sweet Hudson, mommy loves you more than you know, and I’m so glad you came into this world exactly like you did. Unique and perfect, just like you.💙

Healthy Chicken, Broccoli, and Quinoa Casserole

Do you have fond memories of those deliciously rich and creamy casseroles your mom used to make when you were growing up? You know…..the ones with the cans of Cream of Chicken from Campbell’s? haha. Yeah me too!

Although delicious, they’re not the healthiest dishes for you. So, what I love to do now is take delicious recipes and make some substitutions to make it a yummier and healthier version.

Last night, I made this casserole for my husband and I and we loved the way it turned out! I even ate a couple spoonfuls for lunch today – zapped it in the microwave for 45-60 seconds and it was just as good as last night!


Here’s the recipe I adapted so you can try it out for yourself. Let me know what you think.

PS. My husband (who has never liked quinoa) even went back for seconds on this dish! That’s a winner in my book! 🙂

This recipe serves around 6 people.


  • 2 cups reduced sodium chicken broth
  • 1 cup milk (I used Organic 1% but you could also use Unsweetened regular Almond Milk too)
  • 1 teaspoon poultry seasoning
  • ½ cup flour (I used gluten free flour)
  • 2 cups water, divided
  • 1 cup uncooked quinoa, rinsed (I used the mixed ones)
  • 1 pound boneless skinless chicken breasts
  • 2 teaspoons seasoning (I used an all-purpose seasoning)
  • ¼ cup shredded Gruyere cheese (Parmesan and a little feta is actually great too!)
  • 3 cups fresh broccoli florets


  1. SAUCE: Preheat the oven to 400 degrees and generously grease a 9×13 baking dish (the stuff tends to stick so be real friendly with it). Bring the chicken broth and ½ cup milk to a low boil in a saucepan. Whisk the other ½ cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms.
  2. ASSEMBLE THE DISH: In a medium bowl, mix the sauce from step one, one cup water, quinoa, and stir to combine. Pour the mixture into the greased baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning, salt, and pepper. Bake uncovered for about 35 minutes.
  3. BROCCOLI: While the casserole is in the oven baking, place the broccoli in boiling water for 1 minute until it turns bright green and then run under cold water. Set aside until ready to bake with the rest of the casserole.
  4. FINAL BAKE: Remove the casserole from the oven, and check the mixture by stirring it around in the pan, and if needed, bake for an additional 10-15 minutes to get the right consistency. When the quinoa and chicken are cooked and the sauce is thickened, add the broccoli and a little bit of water (up to one cup) until the consistency is creamy and smooth and you can stir it up easily in the pan. Then, top with the cheese and bake for 5-7 minutes, or just long enough to melt and barely brown the cheese.

A few notes….

If the quinoa looks soft and like it has popped open, that means it is done!  You will see a little spiral. If your mixture is not absorbed enough, just bake a little longer until all that liquid is gone. No harm there! 🙂

Be WELL.  To take care of your body and soul so that you are energized and healthy for you and those around you.

Be FIT.  Not only is it important to take care of your body, but to condition your mind and heart with uplifting people and things.

Be INSPIRED.  I know what it’s like to walk through life without an inspiration. Without something that drives me to keep doing what I love every day. But once you find that person, that job, those people, that mission….it inspires your life and takes you to places you never knew you could go.

Above all else, JUST BE YOU.✌🏽️

There is no body greater than YOU and the story you have the ability to write for your life.

So, just be YOU. Unapologetically! And know that YOU have the power to be great and inspire others with your attitude about life.

Exercise has been the BEST thing for our marriage!


Do you and your partner make staying active a priority in your relationship?

After pressing play this morning before starting work, hubby and I decided to put together a little couples workout for you to enjoy with your special someone.

Fitness has become such a core vital behavior of our relationship. It’s something that has helped grow us into stronger individuals so that we are better for each other.

When we first started dating, fitness was not something we used to do together. It is something that has evolved. Over time, it has become a non-negotiable activity daily for us because we have made a decision to live our healthiest lives TOGETHER as a team.

When you have a partner, someone to hold you accountable on your wellness journey, it makes it so much more enjoyable and FUN!😍

Try out this couples workout for a fun sweat sesh with your partner. Don’t have one? Grab a friend and do it!🙌🏽

30 seconds each:
• high knee punches
• mountain climbers
• traveling side punches
• over-over-taps

Now, compete the following:
30 squat ball passes.
15 push-up taps.
30 sit-up ball passes.
15 traveling burpees.
10 incline partner push-ups.
30 alternating side lunges.

Repeat entire workout 3x through.

We guarantee you’ll be sweating like crazy! We were after just ONE round!😳

Don’t have a medicine ball? Grab one of your kids toys, a jar from the pantry, anything to add a little resistance and weight!👍🏽
