1.5lbs organic beef stew meat (cubed)
1/4 cup GF flour
1 can Rotel (mild)
1 14.5oz can beef broth
3 carrots (peeled and sliced)
3 celery stalks (washed & sliced)
1/2 onion (diced)
8-10 small red potatoes (washed & chopped)
Montreal Steak Seasoning
Large ziplock bag
In a large ziplock bag, toss the cubed pieces of beef in the GF flour until completely coated. If your pieces of meat are too big, feel free to use kitchen shears to cut them smaller before tossing.
Then, pour a small amount of coconut oil in the bottom of your pot at medium heat and place the coated meat in bottom of your soup pan. Brown your meat for about 5 minutes. Next, pour in your beef broth and bring to a boil, then let simmer for an hour and a half. This will create nice, tender beef over time.
Once the beef has been simmering, go ahead and add in your chopped carrots, celery, potatoes, onion, and can of Rotel. Stir together. Then season with Montreal Steak Seasoning until you are satisfied!
If you find you need some extra broth, add a little bit of water. If you want the consistency thicker, add in a little bit of leftover flour.
Cook on low at a simmer until everything is tender and cooked.
